Vermentino di Toscana IGT "Cala Civetta"
Grapes: Vermentino 90%, Viognier 10%
Fermentation method: Grapes harvested and preserved with dry ice. Low-temperature pressing in an inert atmosphere; fermentation of the free-run must at a controlled temperature (max 16°C). Malolactic fermentation not carried out.
Maturation: In steel for three months with fine lees.
Aging: From February following the harvest.
Aging potential: Vermentino is a wine to be drunk young, within 2 years of the harvest.
Description: Deep and bright straw yellow. The bouquet is characterized by floral and fruity notes enriched by intriguing mineral nuances. On the palate, it is decidedly fresh and savory, pleasant and with character, with intense fruity notes, especially citrus, and good structure. Persistent finish, consistent with the aromas perceived on the nose.
Food pairing: Suitable for various pairings, from fish appetizers to first courses, fish or white meat main courses, excellent as an aperitif.
Serving temperature: 6-8°C
Ideal glass: Medium-sized tulip glass.
