The Tuscan vineyard hare

Agile in its movements and of a distrustful nature, the hare has crossed the Castagneto vineyards for centuries, arousing the curiosity of ancient peoples. The Etruscans or Rasenna attributed extraordinary powers to the mammal: they believed it was able to spontaneously change sex given its high prolificacy, interpreting it as irrefutable proof of their metamorphic wonders.

Tasting notes

On the palate, it strikes with its roundness and softness, the sweetness of the fruit present in the mid-palate, always well enlivened by the freshness of the acidic component, and by a dense and silky tannic texture, with a long finish. A savory note is often also present, which cannot but bring to mind the presence of the sea.

Food pairings

Excellent with all important dishes of typical Tuscan cuisine: roasts, duck, game, gratinated vegetables, rosemary potatoes. Also suitable for accompanying aged cheeses.
