Winemaking
Grapes harvested at perfect phenolic ripeness and protected with dry ice. Hot maceration (35°C) for 12 hours, followed by fermentation at controlled temperature (max 27°C). Racking after 7 days with the skins, aging on fine lees until malolactic fermentation (November). Maturation in steel for 4 months, then bottle aging for a minimum of 3 months.
Tasting Notes
Full ruby, rich in chromatic matter, enlivened by purplish reflections. The olfactory bouquet is characterized by character and pleasantness, with fruity, floral and spicy notes diffused with hints of undergrowth. The tannins are well present but elegant, subtle, balanced by a fruity roundness and a lively freshness. Persistent and balanced finish.
Food Pairings
Excellent with flavorful first courses and red meat or game main courses. The perfect match? Pappardelle with wild boar ragù.
